Gustaf Mabrouk - a master of the rank

Master pastry chef Gustaf Mabrouk has a long career as a pastry chef.

He won the Pastry Chef of the Year competition at the age of 19, in 1995. He then moved to New York to continue his education.

In recent years, Gustaf has lived and worked in Sweden, including at Delicato as a product developer

He has competed in the World Chocolate Masters and has been team leader for the Swedish Pastry Team.

To the general public, Gustaf is best known for his participation as a master pastry chef in Swedish public service program SVT’s Go’kväll.

Gustaf has also published the book The Chocolate Maker’s Handbook. The book was awarded the first prize at the Måltidsakademien in the fall of 2018 and also received bronze in the World Gourmand Awards 2019.

Alongside Panem, Gustaf also runs STHLM Bean to Bar, where artisanal chocolate is created with cocoa from Colombia.

World pastry chef of the year 2019

The international trade association for bakers and pastry chefs UIBC named Gustaf Mabrouk the UIBC World Confectioner of the Year 2019.

Sweden has won the award twice before, in 2017 as World Confectioner of the Year and in 2015 as World Baker of the Year.

“I am so incredibly honored to receive the World Confectioner of the Year award. I am passionate about the fantastic confectionery profession and most of all about chocolate. My interest extends all the way from the cocoa plantations to the process of making chocolate and then creating fantastic pastries. I hope that this award can help me inspire more people to take an interest in chocolate and the confectionery profession.”

Master’s degree

In 2019, Gustaf received the Master’s degree in confectionery.

The Master’s Certificate is the highest proof of professional skill in a craft profession and guarantees, in addition to great professional knowledge and experience, reliability as a craft entrepreneur.

It is issued by the Swedish Crafts Council to craftsmen who meet the requirements set out in the Act and Ordinance on Master’s Certificates for Craftsmen (SFS 1995:1255 and SFS 1995:1256).
